Easter is coming! I love Easter brunch and the past few years it always includes a recipe using my protein sparing bread! This year I am making my protein sparing bread Croque Monsieur Bread Pudding!

Croque Monsieur bread pudding is filled with ham, Gruyere cheese, onions, garlic and thyme.

My son Kai did not want to be the taste tester for this but once he took a bite, he quickly asked for a large piece!

CHEWY PROTEIN SPARING BREAD:

  • Preheat the oven to 325 degrees F.

  • Separate the eggs (save the yolks for another recipe like my keto ice cream, hollandaise, mayo or lemon curd), and place the whites into a large CHILLED bowl or stand mixer (if the bowl is warm, it activates the gelatin and will gum up). Add the allulose, gelatin, salt and cream of tartar if using and whip the whites for a few minutes until VERY stiff.

  • Turn the mixer to low and gently mix the egg white protein powder into the whites.

  • Note: If adding yolks, lightly combine. But note, the yolks will increase fat and can increase the likelihood of falling.

  • Grease a bread pan with avocado oil spray and fill with Chewy Protein Sparing Bread mixture.

  • Bake for 30 minutes or until golden brown. Turn the oven off and leave the bread in the oven for 15 minutes to prevent the bread from falling.

  • Let it cool completely before cutting or the bread will fall. Cut into cubes and set aside.

  • To make the Croque Monsieur Bread pudding, place the butter flavored coconut oil into a skillet over medium high heat. Add the chopped onions and sauté for 3 minutes. Add the garlic and thyme and saute another minute. Remove from heat and set aside.

  • In a large bowl, place the eggs, cream, broth, Dijon, hot sauce and salt. Stir well to combine.

  • Spray avocado oil spray into an 11 by 7 inch baking dish. Place half of the cubed bread into the dish. Top with half of the shredded Gruyere cheese, diced ham and half of the onion mixture. Repeat with another layer of bread, cheese, ham and onion mixture. Pour the egg mixture into the dish to cover the bread. Cover and refrigerate for 3 hours or overnight.

  • When ready to bake, preheat oven to 325 degrees F. Bake for 30 minutes, then remove from the oven and sprinkle the Parmesan on top and increase the temperature to 375°F. Bake for another 15 minutes or until the Parmesan is golden.

  • Remove from oven and allow to sit for 5 minutes before slicing. Serve with hot sauce if desired.

Bird’s Nest Carrot Cake Cupcakes

Celebrate Easter with these festive Bird’s Nest Carrot Cake Cupcakes that are super moist, naturally sweetened with maple syrup and applesauce, all topped with a cream cheese frosting, toasted coconut and chocolate candies!

Easter is right around the corner and these carrot cake cupcakes make the perfect festive treat! The cutest little desserts that are not only delicious, but make such a great addition to your holiday table. These carrot cake cupcakes are made healthier with whole wheat pastry flour, shredded carrots, coconut oil in place of butter and naturally sweetened with maple syrup and applesauce. The cupcakes are topped with a delicious cream cheese frosting and toasted coconut making adorable “bird’s nests” with egg-shaped chocolate candies.

For these bird’s nest cupcakes, I wanted to go with a carrot cake to stay with the fun Easter theme, but you could of course make any type of cupcakes or frosting you’d like! However I highly recommend making these deliciously moist carrot cake cupcakes as I KNOW you won’t be disappointed! My 2 year old kept calling them “baby bird treats” and absolutely loved them.

Ingredients You’ll Need

  • Whole wheat pastry flour – I love baking with whole wheat pastry flour as it has all the nutritional benefits of whole grain flour while giving these cupcakes a light and fluffy texture. I highly recommend using this, but if you don’t have any on hand you could use white whole wheat flour or regular all-purpose flour
  • Baking soda + baking powder – these act as leavening agents to help the cupcakes rise
  • Carrots – you’ll need to grate about 2 medium carrots to get a healthy cup for this recipe, the grated carrot also helps keep these cupcakes moist
  • Applesauce – just a little bit of unsweetened applesauce in these cupcakes helps to reduce the amount of oil we need to use and also adds a little extra sweetness. You could also use a mashed banana as well
  • Coconut oil – this takes the place of butter in these cupcakes and helps make them moist and fluffy!
  • eggs – gives these muffins their structure and height
  • Sweeteners – I used a combination of coconut sugar along with some maple syrup to naturally sweeten these cupcakes without using refined sugar
  • Spices – a delicious combination of cinnamon, nutmeg, ginger and salt
  • vanilla – enhances the flavor in these cupcakes and tastes so good with the warm spices
  • Shredded coconut – this is what we’ll use to create the little “nests” on top of the cupcakes and make sure to use unsweetened shredded coconut that has longer strands, not coconut flakes that look more like chips
  • Cream cheese – this is needed to make the frosting! I like to set mine out about an hour before using so that it softens and is easier to whip

How to Make Carrot Cake Cupcakes

This recipe makes 12 cupcakes OR you could make 24 mini carrot cake muffins! You will make the batter the exact same way, you’ll just need to adjust the cooking time for the smaller muffins. Here’s how to make them!

  1. Mix dry ingredients. In a large bowl, whisk together the whole wheat pastry flour, baking soda, baking powder, coconut sugar, salt and spices, then set aside.
  2. Mix wet ingredients. In a separate bowl, whisk together grated carrot, eggs, applesauce, maple syrup, and vanilla until all combined. Then mix in the coconut oil, just make sure you melt the coconut oil first and let it cool before mixing with the rest of the ingredients.
  3. Make the batter. Add the wet ingredients to the flour mixture and mix with a spatula until just combined, being careful not to over-mix the batter. Divide the batter evenly between 12 muffin cups lined with cupcake liners (or you could spray them with non-stick spray), making sure to fill each cup about 2/3rds full. You could also make 24 mini muffins!
  4. BAKE! Bake the cupcakes at 350 degrees for 15 to 17 minutes, or until a toothpick is inserted clean then let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack. If baking mini-size muffins, bake at 350 for about 10 to 13 minutes. Next I’ll show you how to make the cream cheese frosting and assemble your bird’s nests!

How to Make the Bird’s Nests

While the cupcakes are cool, you can toast the coconut and make the cream cheese frosting!

  1. Toast the coconut. Toasting coconut adds such a robust, nutty flavor to otherwise plain coconut and gives these cupcakes a great texture! Start by adding the shredded coconut to a large dry skillet (no need for oil!) and cook over medium heat, making sure the coconut is in an even layer in the pan. Continuously stir the coconut in the skillet until golden brown and fragrant, being careful not to let the coconut burn.
  2. Make the frosting. In the bowl of your stand mixer (or you could use a hand mixer), combine softened cream cheese, maple syrup and vanilla and whip on high until smooth.
  3. Assemble the bird’s nests! Once your cupcakes are completely cool, frost each cupcake using a knife or spatula (no need to use a pastry bag to make them look pretty since we’re going to be coating them in coconut!) then sprinkle toasted coconut over each cupcake, pressing down slightly so that the coconut sticks to the frosting. Then place a little bit of frosting onto the bottom of each egg-shaped candy and press it into the center of each cupcake. You’ll need 3 candies per cupcake.

How to Store Bird’s Nest Cupcakes

The great thing about these cupcakes is that they taste even better the next day! Just make sure to store them in a sealed, airtight container and they will last for about a day on the counter then transfer them to your fridge for up to 4 to 5 days. If you’re making these for an Easter or Mother’s Day event, you can absolutely make them ahead of time!

Should You Be Concerned About Arsenic in Rice?

Arsenic-based pesticides have been used in agricultural practices for many years, and, accordingly, soils and groundwater in the US are contaminated with varying levels of arsenic. Because arsenic exists in soil and water, it finds its way into our food supply. And nearly all foods contain some level of arsenic.

What Foods Have the Most Arsenic?

Studies show that most of the arsenic in the American diet comes from meat, milk, poultry, pork, eggs and seafood. Poultry is the worst offender. Some chickens exceed the EPA safety limit for arsenic by 2,000%. Meat and poultry are high in arsenic because animal feed and the antibiotics and intestinal parasites drugs are regularly given to animals containing high amounts of this element. The arsenic then accumulates in the flesh of the animals.

Bone broth, beer and wine, and commercially-available juice and mushrooms contain high levels of arsenic. Rice and cruciferous vegetables can also have high amounts of arsenic depending on where they are grown.

Because the amount of arsenic varies greatly from sample to sample depending on where and how the food is produced, it is technically impossible to list foods according to their arsenic levels; however, meat, milk, poultry, pork, eggs, seafood, bone broth, mushrooms, rice, wine, and juice have consistently tested with the highest amount of arsenic of all foods.

Arsenic in Rice

Rice usually does contain more arsenic than other grains, but the real reason why we associate rice with arsenic isn’t because rice has the highest amount of arsenic from top food sources, but rather because rice is the food that the media decided to highlight. Eating rice every day of the week doesn’t give you as much arsenic as eating meat a few times a week does.

While arsenic certainly isn’t something we want to ingest, there are a host of other, even more dangerous toxins in our food supply. A diet that contains animal products results in greater exposure to these pollutants than does a plant-based diet, because these toxins accumulate up the food chain.

For example, studies show that people who consume dairy products, take in a hundred times the acceptable daily exposure to industrial pollutants, some of which are far more dangerous than arsenic. This is not to minimize the risk of consuming arsenic, but rather to put it in its proper perspective.

How to Reduce Arsenic in Rice

To reduce the amount of arsenic you get from rice, purchase rice grown in California, India, or Pakistan. On average, rice grown in California has 40% less arsenic than rice grown in the southern US (Arkansas, Louisiana, Mississippi, Missouri, Texas, etc.) because arsenic-based pesticides were more heavily used in the southern states.

Lundberg Farms tests their rice and their rice is generally lower in arsenic than that of other growers.

Black rice, red rice, short-grain rice, and basmati rice have the lowest levels of arsenic. (Interestingly, the arsenic in brown rice appears less bioavailable than the arsenic in white rice, meaning that the body doesn’t absorb the arsenic in brown rice as readily as it absorbs the arsenic from white rice.)

How to Reduce Your Overall Arsenic Consumption

And here’s how to reduce your arsenic consumption overall:

1. Avoid foods that tend to have the highest amounts of bioavailable arsenic – meat, seafood, poultry, bone broth, wine and fruit juices, and mushrooms.

2. Avoid food grown in soils that contain chicken manure (used as a fertilizer).

3. Avoid brown rice syrup and commercially available foods that have this sweetener in the ingredients. (Read the ingredient label.)

4. If you use rice milk, consider replacing it with another non-dairy milk, such as almond milk.

5. Enjoy a wide variety of whole grains, including those that usually have lower levels of arsenic, like quinoa, buckwheat, millet, oats, amaranth, teff, and sorghum.

Bonus tips:
Consider growing your own garden so you can grow your own cruciferous vegetables. Improve soil health by making your own healthy compost and avoiding using chicken manure.

Groves coffee house gets new owners, expands to Orange County

GROVES — Paul Borel was a long time customer of Sundara Coffee House & Grill before he became the owner.

Borel would go to the Groves shop daily for what he described as the best coffee he’s ever had, which was created by original owners Herb and Cindy Kreutzer.

The business changed hands and later, when a different owner considered closing Sundara, Borel made an offer.

“It’s been a part of the Groves community for years,” Borel said. “I’m born and raised in Groves and wanted to keep it alive. I have nothing but admiration for Herb and Cindy, and I want to keep their legacy going.”

Borel also worried about the dedicated employees, saying he couldn’t let them lose their jobs.

The allure of the roast

Borel is enamored with the coffee that the Kreutzers serve, and he continues to serve it.

“Herb and Cindy did some extensive research and they came up with a special blend of three different beans from Mexico, Columbia and Brazil and they experimented with a roasting company until they found the exact way to roast the beans,” he said.

“It is specific to Sundara, and Sundara is the only place you can have it. It is a unique flavour; once you taste it you won’t want coffee from anywhere else. I really believe that. I would go every day before I was the owner.

Adrian Todd, Sundara’s general manager, has a long history of working in the restaurant business and is capable of juggling the necessary duties, as well as acting as a barista, cooking and running supplies to the Orangefield location.

He said the most popular drink is the caramel frappe.

Todd said it is similar to what one might get at another coffee shop nearby.

“But it’s made with love, that’s what I like to say,” Todd said.

He is in the process of developing a drink specifically for the City of Groves. Todd did some research and learned from Groves’ ties to pecans.

“A pecan praline frappe,” he said of what the Groves-inspired drink would be. “I did some surveys beforehand and asked folks if they would buy it, and they found it enticing. I have people still pressing me to know when (I will do it.)”

Todd said the atmosphere at Sundara is community driven, even if there is a well-known coffee chain business down the street.

“This is the place where folks can run into their neighbors, run into their friends and sit outside and talk,” Todd said. “I spent 20 years in San Antonio in the restaurant business. Coffee shops like this have always been special to me because that’s where I would hang out in San Antonio, where I would go.”

Todd isn’t looking to reinvent the wheel at Sundara. He wanted to keep the original legacy alive and breathe some fresh air into the shop, he said.

Orangefield

The Orangefield location at 6381 FM 1442 — the corner of FM 105 and FM 1442 — opened in December and, currently, serves the coffees with a few exceptions.

Borel said they send soups and baked goods to Orangefield which are cooked in the Groves location.

He said the public reaction has been overwhelming.

“It’s amazing the support we’ve gotten, the likes and responses we got,” Borel said.

Like the Groves community, the Orangefield community welcomed Sundara with open arms, he said.

Future

Borel is looking to become more involved in the community and collaborate with other local businesses. He’s already on that path with a Sundara loyalty card that, after a certain amount of purchases, the card bearer can get a free car wash at a local business.

Employees of that business are then able to get discounts on their purchases at the coffee house.

Borel looks to add more businesses to the card, he said.

The future of the Orangefield location includes the possibility of adding a kitchen, he added.
