Croque Monsieur Protein Bread Pudding

Easter is coming! I love Easter brunch and the past few years it always includes a recipe using my protein sparing bread! This year I am making my protein sparing bread Croque Monsieur Bread Pudding!

Croque Monsieur bread pudding is filled with ham, Gruyere cheese, onions, garlic and thyme.

My son Kai did not want to be the taste tester for this but once he took a bite, he quickly asked for a large piece!

Croque Monsieur Protein Bread Pudding

CHEWY PROTEIN SPARING BREAD:

  • Preheat the oven to 325 degrees F.

  • Separate the eggs (save the yolks for another recipe like my keto ice cream, hollandaise, mayo or lemon curd), and place the whites into a large CHILLED bowl or stand mixer (if the bowl is warm, it activates the gelatin and will gum up). Add the allulose, gelatin, salt and cream of tartar if using and whip the whites for a few minutes until VERY stiff.

  • Turn the mixer to low and gently mix the egg white protein powder into the whites.

  • Note: If adding yolks, lightly combine. But note, the yolks will increase fat and can increase the likelihood of falling.

  • Grease a bread pan with avocado oil spray and fill with Chewy Protein Sparing Bread mixture.

  • Bake for 30 minutes or until golden brown. Turn the oven off and leave the bread in the oven for 15 minutes to prevent the bread from falling.

  • Let it cool completely before cutting or the bread will fall. Cut into cubes and set aside.

  • To make the Croque Monsieur Bread pudding, place the butter flavored coconut oil into a skillet over medium high heat. Add the chopped onions and sauté for 3 minutes. Add the garlic and thyme and saute another minute. Remove from heat and set aside.

  • In a large bowl, place the eggs, cream, broth, Dijon, hot sauce and salt. Stir well to combine.

  • Spray avocado oil spray into an 11 by 7 inch baking dish. Place half of the cubed bread into the dish. Top with half of the shredded Gruyere cheese, diced ham and half of the onion mixture. Repeat with another layer of bread, cheese, ham and onion mixture. Pour the egg mixture into the dish to cover the bread. Cover and refrigerate for 3 hours or overnight.

  • When ready to bake, preheat oven to 325 degrees F. Bake for 30 minutes, then remove from the oven and sprinkle the Parmesan on top and increase the temperature to 375°F. Bake for another 15 minutes or until the Parmesan is golden.

  • Remove from oven and allow to sit for 5 minutes before slicing. Serve with hot sauce if desired.

Easy Homemade Deli Meat – Maria Mind Body Health

I’ve had recipes for decades using deli meat such as my protein noodle lasagna, protein spare chips, protein noodle pad Thai, protein noodle soup and even enchiladas! But through the years, my favorite healthy brands started to add fillers and sugar. That’s why I needed to write a recipe and I wanted an easy recipe for homemade deli meat!

The recipe for making homemade deli meat was intimidating to me at first. Then my new friend Aubrey, who came on my keto trip to Greece, sent me step by step photos. We keep in contact and text almost daily. She showed me how easy, affordable and healthy making homemade deli meat can be! I am grateful for Aubrey!

HOW TO MAKE DELI MEAT IN AN INSTANT POT

If you don’t want to go through the trouble of boiling a pot of water for an hour, you can use an Instant Pot!

Spray 2 wide mouth canning jars with avocado oil spray and place the pureed chicken into them. Put on lids onto the jars. Pour a cup of water into the bottom of the Instant Pot. Place a trivet into the bottom and place the jars on the trivet. Press Manual and pressure cook for 20 min. Once finished, place the jars in the fridge for 8 hours before removing and slicing.

TIPS ON MAKING HOMEMADE DELI MEAT

As you can see in my photos, I have a lot of holes. This is user error. I should have pressed the pureed chicken into the meat press as I added it. After I made a few batches, I found that when I packed it tightly, I didn’t get the holes.

  • Place the chicken and salt into a food processor and pulse until smooth.

  • Spray the inside of the deli meat press with avocado oil spray and place the mixture into the press. Press down firmly.

  • Bring a large pot of water to a boil. Place the meat press into the water and boil on a low simmer for 1 hour or until the internal temperature reaches 158 degrees F.

  • Place the unopened container in the fridge for 10 hours or overnight. Remove and slice. Enjoy as a sandwich with my protein sparing bread recipe or dehydrate in an oven or dehydrator for 6 hours on lowest temperature (155 degrees F) to make protein chips!

An Administrative Perspective – PHE America

As we begin a new year, the Society of Health and Physical Educators (SHAPE America) continues to engage two national task forces to revise the national standards in health and physical education and I consider this work to be critical to the future of our profession. In regularly reviewing and revising our standards, we make certain that we include the latest research, hands-on teacher experiences, and best instructional practices from the field. Additionally, it allows us to continue to take a critical look at how our society and education have evolved around the essential work of student wellness in our schools.

In recent years, I served at my state level on our standards review team and found the work to be invaluable in serving the needs of every student. We made a lasting commitment to forging forward with progressive and responsive core ideas and disciplinary practices that speak to every community in my diverse state of New Jersey. This is the task ahead for the national revision. In order to serve the needs of our young people across the nation, SHAPE America has the momentous responsibility of building national standards that echo the voice of every child in America.

I believe that this significant task means incorporating the very latest research on the critical and essential skills of physical movement in physical education and a focus on skill-based health education to foster a classroom of inquiry-based instruction. We must incorporate the abilities of students to contribute to and create a learning environment where they can thrive, grow and learn. Our future standards must reflect that student-focused approach.

There has been vast and robust discussion about the focus on what the non-negotiable needs are for every student in a post-pandemic educational world in health and physical education. Is it social-emotional learning? Is it equity, diversity, and inclusion? Is it trauma-informed practice? Is it restorative practice? I believe all of these perspectives contribute to a comprehensive set of national standards. The documents that are ultimately published at the national level will provide foundational guidance and serve as a blueprint for instruction for many states and for many local school districts.

Whether or not the accomplishmentioned student needs are met; ultimately falls upon the teacher on the ground. There is no substitute for a caring, loving, thoughtful, askable, and trusted adult in the classroom. Without that, no set of standards can ever come to life. We must acknowledge through these national performance indicators that not every child is having the same experience in the classroom, but that every child has the right to a developmentally appropriate health and physical education experience.

In closing, I am enthusiastic about the future work of the National Standards Revision Task Forces in Health Education and Physical Education. I believe all health and physical educators should be excited about the essential skills of our work. I am sure we will continue to teach skills such as dribbling, passing, shooting, striking, and volleying in physical education toward health-enhancing levels of physical fitness. We will also deliver timeless opportunities for kids to engage in decision-making, advocating, goal-setting, and analyzing influences. These and all other outcomes help to make the case that our academic work remains essential to the life and death of every young person. I am hopeful that these documents will speak directly to the hearts and minds of every K-12 student in every community of our country. Our ability to translate these standards in every classroom offers us a daily opportunity to prove that our profession is the most important work happening in our nation’s schools.

Zero Carb Mozzarella Sticks – Maria Mind Body Health

If you haven’t noticed, I do not allow advertising on my site.

I just didn’t agree with some of the products that were advertised. They were keto products, but they were unhealthy and I would never personally eat most of the products. It was hard to say no to blog advertisements; they pay thousands of dollars a month, but I just feel uncomfortable about having the products I didn’t recommend on my website.

Instead, I have created a shopping list where you can find all the healthy ingredients that are difficult to find in grocery stores (and if you do find them, they are often very expensive).

  2. Place the ground beef in a large bowl and season with the salt. Use your hands to combine well. Divide the beef into 8 equal portions and form each portion into a ¼-inch-thick rectangle, about 3½ inches by 2 inches.
  3. Place one string of cheese in the center of a patty. Use your fingers to seal the patty around the cheese; be sure to seal the edges well or the cheese will melt out. Repeat with the remaining patties and cheese. Wrap a slice of bacon around the entire patty, then secure the ends of the bacon with tooth picks. Repeat with the remaining patties and pieces of bacon.
  4. Place the wrapped patties on a rimmed baking sheet lined with parchment paper if using the oven or in the air fryer basket in a single layer if using an air fryer and bake or cook for about 8 minutes, flipping after 4 minutes, until the bacon is cooked to your liking.
  5. Remove the mozzarella sticks from the oven or air fryer and let cool for a few minutes before consuming or the melted cheese will burn your mouth.
  6. Store in an airtight container in the refrigerator for up to 4 days. To reheat, place in a preheated 400°F oven or air fryer for about 3 minutes, or until heated through.
