Lemon Poppy Seed Protein Sparing Angel Food Cake

Many of you know I worked at a coffee shop since I was 15 years old. At this cute coffee shop, I would make the best lemon poppy seed muffins with delicious lemon curd dolloped on top! Before school, I would go to the coffee shop to make the scones and the muffins and then after school, I would go back to work. At the end of the day, I got to bring home the cinnamon rolls, scones and lemon poppy seed muffins that didn’t sell! So guess what??? I would make lemon poppy seed muffins to make sure I had some to go home with! No wonder why I was so unhealthy and overweight! Once I was diagnosed with PCOS, I decided to create healthy keto recipes of my favorite things like this protein sparing lemon poppy seed angel food cake!

My recipe for protein sparing angel food cake is only 42 calories and 1 gram of total carbs per slice compared to the 700 calories and 97 grams of carbohydrates that my lemon poppy seed muffin had!

Lemon Poppy Seed Protein Sparing Angel Food Cake

  • Preheat oven to 350 degrees F (175 degrees C). NOTE: If using allulose, bake at 325 degrees F.

  • Sift protein powder, poppy seeds, sweetener and Further Food gelatin together and set aside.

  • In a large clean bowl, whip egg whites with a pinch of salt until foamy (save the yolks for “healthified” creme brule, “healthified” coconut custard, OR “healthified” ice cream).

  • Add cream of tartar and continue to beat until very stiff (you will be able to put the bowl upside down and the whites won’t fall out).

  • Add your favorite extract flavor.

  • Gently fold in the protein powder mixture.

  • Pour into a greased 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

  • Allow it to cool while you make the lemon curd.

  • Combine allulose, lemon juice, 4 eggs and lemon zest in a heavy medium saucepan and whisk to blend; add coconut oil. Whisk constantly over medium heat until mixture thickens and coats back of spoon thickly (do not boil), about 5 minutes.

  • Pour mixture through strainer into medium bowl. Place bowl in larger bowl filled with ice water and whisk occasionally until lemon curd is completely cooled, about 15 minutes.

  • Can be made 1 day ahead.

  • To serve, place one slice of protein-sparing angel food cake onto a plate and top with a few tablespoons of lemon curd.

Did you ever wonder why it is easier to gain weight than keeping it off?

The key to this is in the fat cells where a powerful hormone is produced called leptin. Leptin signals the brain to regulate the metabolism in order to store or burn fat.

Leptin is a hormone produced by fat cells that helps regulate appetite and energy expenditure. When leptin levels are high, it signals to the brain that the body has enough energy and can stop eating. However, when the body becomes resistant to leptin, this signaling system breaks down, leading to increased appetite and decreased energy expenditure. In this blog post, we will discuss some tips on improving leptin sensitivity.

WEIGHT LOSS STRUGGLES

85% of people who lose weight end up regaining weight because the “metabolic thermostat” of the body, leptin, is reset upward automatically. When people lose weight, leptin production decreases, which causes people to regain the lost weight. This protein hormone is derived from fat cells so when you lose fat, leptin levels drop. When you gain fat, leptin levels rise. Once leptin is secreted by your fat cells, it travels to the hypothalamus; which controls eating behavior. Once it’s there, leptin activates anorectic nerve cells, which decreases your appetite. At the same time, leptin stops cells from stimulating your appetite. To put it simply, when leptin levels drop, you get hungry. When they go up, you feel full. Leptin communicates directly to your brain, telling the brain how much fat is in storage. It controls appetite, energy, and metabolic rate. Leptin problems are the primary reason for food cravings, overeating, slow metabolism, food obsession and heart disease.

You’d think that having extra fat stores creates more leptin, but that is where an interesting mystery comes into play. 98% of those who are significantly overweight are leptin-resistant. Most defects in leptin signaling may lead to obesity, overeating and less energy expenditure. Leptin-resistance is similar to insulin-resistance in that it occurs after being overexposed to high levels of the hormone. At this point, the body no longer responds to the hormone. Much like high blood sugar levels result in surges in insulin, sugar metabolized in fat cells causes the fat to release surges in leptin. Over time, leptin-resistance may develop.

This is also why so many people don’t lose weight on high fat keto or carnivore. Or they lose a little weight then stall. If you are overweight or obese, you are likely leptin resistant so don’t get the “I’m full” signal like you should. So you overeat and overeat on fat means less of your own body fat burned for fuel. You have to dial the dietary fat down so you lose more body fat. Losing body fat will then help reverse the leptin resistance and help you feel full quicker.

5. Reduce Stress

Chronic stress can also contribute to leptin resistance. Stress can lead to inflammation and disrupt hormone balance, both of which can contribute to leptin resistance. Finding ways to reduce stress, such as meditation, yoga, or spending time in nature, can improve leptin sensitivity.

In conclusion, improving leptin sensitivity is important for regulating appetite and energy expenditure. By reducing calorie intake, prioritizing protein intake, exercising regularly, getting enough sleep, and reducing stress, it is possible to improve leptin sensitivity and promote a healthy weight. HOW TO MAKE CARNIVORE SCOTCH EGG

  • To cook perfect soft-boiled eggs, fill a medium saucepan half way with water and bring to a boil. Gently place the eggs in the boiling water and cook for 4 1/2 minutes. Remove the eggs from the water and place in ice water for 10-15 minutes. Once cool, carefully peel the eggs and set them aside.

  • Preheat the oven to 425°F.

  • In a medium bowl, mix the ground pork with the salt until well combined. Place one-third of the pork on a piece of parchment paper, and, using your hands, flatten it out into as thin a circle as possible. Place a soft-boiled egg in the center of the meat and wrap the meat up and around the egg using parchment paper to lift it over the egg. Secure it closed by pressing the meat together, being careful not to break open the egg. Place the beaten egg into a small bowl. Place the Carnivore Crisps Flour into another small bowl. Dip the pork wrapped eggs gently into the beaten egg, then into the Carnivore Crisp Flour. Use your hands to form a crust around each scotch egg.

  • Place the eggs on a rimmed baking sheet, and bake for 20 minutes, or until the Carnivore Crisps flour is crisp and the pork is cooked through.

  • To serve, slice each fried egg in half with a very sharp serrated knife. Place the halves, cut side up.

  • Store extras in an air tight container in the fridge for up to 5 days. Reheat leftovers on a rimmed baking sheet in a 400°F oven for 7 minutes, or until heated through.

“From manufacturers providing the critical parts that we need for our arsenal – to technology companies developing innovative systems and capabilities – small businesses are vital along the entire spectrum of the Department’s needs,” Deputy Secretary of Defense Dr. Kathleen Hicks said. “Reducing barriers and creating more opportunities for small businesses will allow us to expand, innovate, and diversify, increasing our warfighter advantage, strengthening our supply chains, increasing competition in our marketplace, and growing our economy here at home.”

Small businesses make up 99.9 percent of all US businesses as well as 73 percent of companies in the defense industrial base, and last year small businesses were awarded over 25 percent of all DoD prime contracts. As the economic engine of our nation, small businesses create jobs, generate innovation, and are essential, daily contributors to national security and the defense mission. This strategy will help DoD harness the full potential of small businesses through three objectives: implement a unified management approach for small business programs and activities; ensure the Department’s small business activities align with national security priorities; and strengthen the Department’s engagement and support of small businesses.

“Fostering a resilient and robust industrial base is one of my top priorities,” said Dr. William LaPlante, Under Secretary of Defense for Acquisition and Sustainment. “Supporting small businesses is not just about meeting a goal or checking a box; it’s about building advantages for our warfighters. All of American industry, especially our innovative small businesses, has a role in developing, delivering, and sustaining the critical capabilities that are required to further implement the National Defense Strategy.”

“Small businesses are crucial to national security,” Director of the Office of Small Business Programs Farooq Mitha added. “Our military depends on small businesses that bring innovation and agility to support DoD’s mission. From providing critical component parts, to cutting edge software platforms, to essential services, small businesses provide support across nearly the entirety of the Department of Defense.”

As part of DoD’s efforts to strengthen support of small businesses, this strategy focuses on stepping up engagement with industry, including providing more tools and resources. This engagement and training effort will be facilitated by the Department’s ninety-six APEX Accelerators located across the country, formerly known as the Procurement Technical Assistance Centers, which serve as a resource for small businesses to increase their readiness, helping them find opportunities to do business with the Department and accelerate their insertion into the defense marketplace.

Sick of Winter? Try Saunas

Winter can be long and dark. Sometimes you need something to help lift your mood during long dark days. Many of you know I am in love with my new sauna blanket and it helps get through winter in many ways!

A long chilly winter day gets most of us anxious and edgy. Take a mini vacation to the sauna to help your mind unwind and your body rejuvenate!

Especially if you roll in the snow after the sauna (which I loved doing in high school with friends), the hot and cold therapy will give you a huge dose of endorphins to boost your mood!
