Readers are Leaders – PHE America

I am not sure where I first heard the phrase “readers are leaders” but it is something that has stuck with me throughout my entire life. I am now in my second year of retirement from teaching and coaching after 37 years of doing both. As I have thought about what to do in my retirement, one thing that keeps coming back into my mind is the need to read some great books. I have always believed that reading can help you become the best version of yourself for others. When you are busy with coaching and teaching, like I was for many years it is very hard to find the time or make the time to read. My goal is to slow down to read books that will allow me to continue to grow and make an impact in another way.

I started my quest for more knowledge by listening to podcasts by Chris Wirth of No Quit Living. His guests were successful people from all walks of life. I loved listening to all the great ideas his guest presented time and again. As I listen to No Quit Living, I notice many guests refer to their reading and how it is a priority in their lives. This inspired me to seek out books that lift me up more and do more with my life. Chris Wirth and a friend of mine Fred Quartlebaum (Assistant Basketball Coach at The University of Kansas), co-wrote a little book called: The Positivity Tribe. In the book they share many great ideas, but one that resonates with me is “We Rise by Lifting Others Up.” I loved the idea; what a great way to live life. I wondered what types of books Wirth and Quartlebum enjoyed reading, and found that Wirth reads books that had an impact on him personally and professionally. I decided to pick one from his list to read.

The book I chose was The Energy Bus by Jon Gordon. Many of my coaching and teaching friends previously told me they enjoyed reading it. The lessons I learned and chose to apply are many. Pearls from the book include the phrases: we are all the drivers of our own bus; we attract what we think about; thoughts are magnetic, we have to fuel our ride in life with positive energy (to attract the same in return), and we get what we give to find what we look for.

Now when I begin to read any book I always take notes and write things down that really strike a chord with me, after I am done reading a book, I type up my notes so I can refer to them more easily. As I am writing this article I am referring to my book’s notes as well as to refresh my memory.

As I continue with my reading journey, I realize what I most enjoy is reading about what others have done that I would like to do. My next read was Chop Wood Carry Water by Josh Medcalf. Josh emphasized throughout his book that every inch matters. Every little thing we do matters. Everything you choose to read, listen to, or look at matters. He suggests it’s not difficult to read 10 pages of a great book each day or to take a twenty-minute walk to stay healthy. Medcalf shares an interesting story about a young person acquiring the necessary skills from a mentor. The mentor always teaches the young person through a series of steps how to acquire mastery of any skill. He makes the reader feel like they are coming along for the ride with him and they can do it themselves as well.

The next book I could not wait to dive into was Pound the Stone also by Josh Medcalf. I have heard over the years many coaches refer to this book as something they use with their teams. After reading it I can understand why. Everyone wants to be great until it’s time to do what greatness requires. I have heard Nick Saban, the Alabama football coach say the following many times: “Commit to the process of what you do rather than the outcome, it always happens 1% at a time, and successful people just keep swinging the hammer one more time -what matters most is that they keep on swinging.”

Lessons I have learned from Pound the Stone can be summed up in phrases like: “Work in the dark so you can shine the light, get comfortable being uncomfortable in order to grow, or most people take shortcuts instead of doing the work.” One of the main things I have taken from this book and used with myself and with others is to work in the dark so that you can shine in the light! You have to get comfortable with being uncomfortable in order to grow. Most people just take shortcuts instead of doing the work. These epitaphs are lessons for people to become better versions of themselves.

The next step in my reading journey was The Fred Factor by Mark Sanborn. This is a story about an ordinary postman who made a difference for everyone with whom he came in contact. Fred did this by doing more than what was necessary and exceeding daily expectations. Some of the lessons learned from the book for me were the following: Do good and you will feel good, the best never rest, treat customers and others as friends, make the most of each day, the impact you have on others is the reward , treat others as you would like to be treated, and fear nothing except to waste the moment. Fred was an ordinary person who treated people with dignity and kindness and that’s what set him apart from others.

Think and Grow Rich by Napolean Hill was my next read. Written in 1937, it is the 6th best selling book of all time and I have never heard of it. After reading it I began to realize why people enjoyed it so much. One of the many lessons that I learned from Napolean Hill was what he would do after he got done reading a book. Consider the source and then do it your way. Be a student and not a follower. Be eager to learn and ready to get more mental food whenever you can. Success always leaves clues!

The last book that I read was Rich Dad, Poor Dad by Robert Kiyosaki. The title doesn’t sound that interesting but the book is very informative. Lessons learned were: Don’t work for money make money work for you, buy assets and not liabilities, assets are things that put money in your pocket, liabilities are something that takes money out of your pocket, and rich people buy assets and not liabilities. The author suggested that people should take more time to learn than to earn. Know a little about a lot and surround yourself with people who know a lot. It was a simple message but it made a lot of sense to me and is something I have tried to apply since reading the book.

Reading has led me to some great information. My only regret is that I did not take the necessary time to read more until I retired. Remember “Leaders are Readers” and hopefully this will give you some new information to start you along your journey.

Lemon Poppy Seed Protein Sparing Angel Food Cake

Many of you know I worked at a coffee shop since I was 15 years old. At this cute coffee shop, I would make the best lemon poppy seed muffins with delicious lemon curd dolloped on top! Before school, I would go to the coffee shop to make the scones and the muffins and then after school, I would go back to work. At the end of the day, I got to bring home the cinnamon rolls, scones and lemon poppy seed muffins that didn’t sell! So guess what??? I would make lemon poppy seed muffins to make sure I had some to go home with! No wonder why I was so unhealthy and overweight! Once I was diagnosed with PCOS, I decided to create healthy keto recipes of my favorite things like this protein sparing lemon poppy seed angel food cake!

My recipe for protein sparing angel food cake is only 42 calories and 1 gram of total carbs per slice compared to the 700 calories and 97 grams of carbohydrates that my lemon poppy seed muffin had!

Here is my before photo when I was eating too many lemon poppy seed muffins and this is my after photo. Protein sparing modified fasting helped me get to my goal weight.

Lemon Poppy Seed Protein Sparing Angel Food Cake

  • Preheat oven to 350 degrees F (175 degrees C). NOTE: If using allulose, bake at 325 degrees F.

  • Sift protein powder, poppy seeds, sweetener and Further Food gelatin together and set aside.

  • In a large clean bowl, whip egg whites with a pinch of salt until foamy (save the yolks for “healthified” creme brule, “healthified” coconut custard, OR “healthified” ice cream).

  • Add cream of tartar and continue to beat until very stiff (you will be able to put the bowl upside down and the whites won’t fall out).

  • Add your favorite extract flavor.

  • Gently fold in the protein powder mixture.

  • Pour into a greased 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for 45 minutes.

  • Allow it to cool while you make the lemon curd.

  • Combine allulose, lemon juice, 4 eggs and lemon zest in a heavy medium saucepan and whisk to blend; add coconut oil. Whisk constantly over medium heat until mixture thickens and coats back of spoon thickly (do not boil), about 5 minutes.

  • Pour mixture through strainer into medium bowl. Place bowl in larger bowl filled with ice water and whisk occasionally until lemon curd is completely cooled, about 15 minutes.

  • Can be made 1 day ahead.

  • To serve, place one slice of protein-sparing angel food cake onto a plate and top with a few tablespoons of lemon curd.

Croque Monsieur Protein Bread Pudding

CHEWY PROTEIN SPARING BREAD:

  • Preheat the oven to 325 degrees F.

  • Separate the eggs (save the yolks for another recipe like my keto ice cream, hollandaise, mayo or lemon curd), and place the whites into a large CHILLED bowl or stand mixer (if the bowl is warm, it activates the gelatin and will gum up). Add the allulose, gelatin, salt and cream of tartar if using and whip the whites for a few minutes until VERY stiff.

  • Turn the mixer to low and gently mix the egg white protein powder into the whites.

  • Note: If adding yolks, lightly combine. But note, the yolks will increase fat and can increase the likelihood of falling.

  • Grease a bread pan with avocado oil spray and fill with Chewy Protein Sparing Bread mixture.

  • Bake for 30 minutes or until golden brown. Turn the oven off and leave the bread in the oven for 15 minutes to prevent the bread from falling.

  • Let it cool completely before cutting or the bread will fall. Cut into cubes and set aside.

  • To make the Croque Monsieur Bread pudding, place the butter flavored coconut oil into a skillet over medium high heat. Add the chopped onions and sauté for 3 minutes. Add the garlic and thyme and saute another minute. Remove from heat and set aside.

  • In a large bowl, place the eggs, cream, broth, Dijon, hot sauce and salt. Stir well to combine.

  • Spray avocado oil spray into an 11 by 7 inch baking dish. Place half of the cubed bread into the dish. Top with half of the shredded Gruyere cheese, diced ham and half of the onion mixture. Repeat with another layer of bread, cheese, ham and onion mixture. Pour the egg mixture into the dish to cover the bread. Cover and refrigerate for 3 hours or overnight.

  • When ready to bake, preheat oven to 325 degrees F. Bake for 30 minutes, then remove from the oven and sprinkle the Parmesan on top and increase the temperature to 375°F. Bake for another 15 minutes or until the Parmesan is golden.

  • Remove from oven and allow to sit for 5 minutes before slicing. Serve with hot sauce if desired.

Readout of Roundtable on Capital Access for Small Businesses

Yesterday, the Administrator of the Small Business Administration (SBA) Isabel Guzmán, the Deputy Secretary of the Treasury Wally Adeyemo, American Rescue Plan Coordinator Gene Sperling, and Deputy Director of the National Economic Council Bharat Ramamurti were joined by US Senator John Hickenlooper (D -CO) and small business leaders, advocates, and mission lenders with particular expertise in reaching minority small businesses to discuss the Biden-Harris Administration’s small business agenda to expand capital access, including newly proposed rules from the SBA and historic investments by the Treasury Department in CDFIs. The group includes non-profit mission lender groups, Community Development Financial Institutions (CFIs), foundations, and advocacy groups all seasoned in meeting the needs of historically underserved small business owners.

Participants agreed on the importance of breaking down barriers to capital by meeting small business owners where they are, providing multiple paths to accessing capital, and offering support services needed to navigate available programs to better reach underserved small business owners. The Biden-Harris Administration is working to address these needs in a number of ways, including through investments in the American Rescue Plan that have helped set the stage for supporting small businesses for years to come. SBA is proposing reforms that would make it easier for lenders to work with SBA to offer small dollar loans, expanding the pool of lenders and capital options for small businesses with a focus on the historically underserved. Treasury has launched an interagency effort to identify gaps in services for underserved communities and made historic investments in the CDFIs that often serve as the primary lender for minority-owned businesses.

Administrator Guzmán provided an overview of her capital access reform agenda for the SBA. This included the proposal to lift the moratorium on Small Business Lending Company (SBLC) licenses, proposed reforms to the Small Business Investment Company (SBIC) Program, and proposed streamlining and modernization of the affiliation, lending criteria, and employee ownership requirements for the SBA’s Business Loan Programs. The proposed SBLC rule would allow SBA to pilot this expansion of lending activity while ensuring proper lender engagement and protection protocols. The Administrator identified the priority for these new SBLC licenses to focus on a diverse representation of lenders that responsibly meet the capital needs of the smallest businesses, minority businesses, and rural communities. In addition, later this year SBA plans to launch significant technological improvements to its small business borrower-lender matching tool, improving the experience and ease of matching potential borrowers and lenders.

The Deputy Secretary spoke to the historic cooperation in the Biden-Harris Administration between agencies to support underserved communities, especially when it comes to community investment and access to capital. Through the Emergency Capital Investment Program, CDFI Fund, and State Small Business Credit Initiative, the Treasury has deployed billions in funding to assist small and minority-owned businesses and consumers. In July, Vice President Harris announced the formation of the Interagency Community Investment Committee (ICIC), chaired by the Treasury Department, which has since led a process to solicit input on how agencies can better align to support underserved communities.

Senator Hickenlooper emphasized the critical nature of expanding small business activity nationwide and highlighted the role responsibly regulated fintechs can play in expanding access to affordable capital for underserved small businesses while protecting the integrity of the system.

In the meeting, participants recommended the Biden-Harris Administration on these initiatives that have improved access to capital and addressed persistent gaps in lending. One participant raised how welcome and necessary the proactive consideration around expanding SBLC licenses to focus on mission-based lenders would be, and recommended SBA for prioritizing a measured expansion of licenses to ensure consumer protections. Another leading small business advocate highlighted how the expansion of SBLC licenses would allow for a diversification of lending options, including mission lenders and responsible fintech options, to fill acute capital gaps and commended the SBA’s borrower protection principles. Multiple participants highlighted the importance of making sure capital allocators reflect the diversity of America and its small business owners. The group discussed the critical opportunity to expand the use of technology to scale lending operations, alternative underwriting models, and technical assistance delivery.

Easy Homemade Deli Meat – Maria Mind Body Health

I’ve had recipes for decades using deli meat such as my protein noodle lasagna, protein spare chips, protein noodle pad Thai, protein noodle soup and even enchiladas! But through the years, my favorite healthy brands started to add fillers and sugar. That’s why I needed to write a recipe and I wanted an easy recipe for homemade deli meat!

The recipe for making homemade deli meat was intimidating to me at first. Then my new friend Aubrey, who came on my keto trip to Greece, sent me step by step photos. We keep in contact and text almost daily. She showed me how easy, affordable and healthy making homemade deli meat can be! I am grateful for Aubrey!

TESTIMONY ABOUT MY EASY HOMEMADE DELI MEAT

“Cost me 13$ to make 2 pounds cooked. (I got the chicken on sale). I can get the same amount of deli meat at Costco for $20, but the pre-sliced ​​is way thicker and hard on the teeth. It also isn’t perfectly clean. So, I saved money AND have clean deli meat! Only takes a little work! I love that I can adjust the thickness and seasoning! And it tastes WAY better!” Aubrey

HOW TO MAKE DELI MEAT IN AN INSTANT POT

If you don’t want to go through the trouble of boiling a pot of water for an hour, you can use an Instant Pot!

Spray 2 wide mouth canning jars with avocado oil spray and place the pureed chicken into them. Put on lids onto the jars. Pour a cup of water into the bottom of the Instant Pot. Place a trivet into the bottom and place the jars on the trivet. Press Manual and pressure cook for 20 min. Once finished, place the jars in the fridge for 8 hours before removing and slicing.

TIPS ON MAKING HOMEMADE DELI MEAT

As you can see in my photos, I have a lot of holes. This is user error. I should have pressed the pureed chicken into the meat press as I added it. After I made a few batches, I found that when I packed it tightly, I didn’t get the holes.

  • Place the chicken and salt into a food processor and pulse until smooth.

  • Spray the inside of the deli meat press with avocado oil spray and place the mixture into the press. Press down firmly.

  • Bring a large pot of water to a boil. Place the meat press into the water and boil on a low simmer for 1 hour or until the internal temperature reaches 158 degrees F.

  • Place the unopened container in the fridge for 10 hours or overnight. Remove and slice. Enjoy as a sandwich with my protein sparing bread recipe or dehydrate in an oven or dehydrator for 6 hours on lowest temperature (155 degrees F) to make protein chips!

In the state of Idaho, the Fast Forward Program provides students attending public schools access to $4,125.00 to help pay for dual/concurrent enrollment credits, Advanced Placement College Board, and Professional Technical Education exams and overload course fees. Dual/concurrent enrollment is a collaborative partnership between higher education and high schools to provide college courses for high school students. The high school instructors are pre-approved by the college/university academic departments to deliver college-level courses.

A fundamental component of this partnership is that the courses dually taught are closely aligned while still allowing some academic freedom between instructors. From our learned experience, this process can be tedious, drawn out, and complicated. Therefore, we offer the following strategies for success in navigating the dual credit program.

Perspectives from a College Instructor

Observations. As a dual credit liaison, the role of the college instructor is to reach out to all assigned high school dual credit instructors and determine a course observation time, per the requirements of the liaison contract. In our efforts to streamline this process, observation times are scheduled on dates that correspond with the completion of signature assignments. For example, one signature assignment is a student-taught skill presentation. Thus, the high school instructor coordinates an observation time which allows the liaison the opportunity to view the completion of this signature assignment.

As a liaison, it is critical to ensure the course offerings are as similar as possible while maintaining academic autonomy among teachers. In addition, while the liaison is required to complete evaluations for each dual credit instructor, this role should not be viewed as “employer-employee.” With this in mind, the observations have led to a productive discussion of how to better align the signature assignments and associated grading rubrics. For example, one grading criterion used for the aforementioned signature assignment is the inclusion and presentation of joint movements and muscle actions for the skill. Through observation, we identified the need for students to spend more time identifying and presenting these criteria to a group. Thus, the role of observation proved vital to the improvement of the student’s experience.

When a college instructor is approached about being a dual credit liaison, there are several incentives to take on the role. As a dual credit liaison, there is an opportunity to create relationships with high school instructors, recruit students, review and improve courses, etc. However, one of the most critical components of a successful dual credit program is establishing communication best practices. In our experience, the following practices listed below are essential for the alignment of courses.

Face-to-Face Discussions. For both instructors to be on the same page about course delivery and content, having frequent face-to-face conversations is a must, especially at conception. This requires time out of everyone’s schedules, posing the largest hindrance. That said, in face-to-face meetings, topics for discussion should include (at a minimum) identifying primary goals and determining alignment strategies.

Shared Documents. Documents shared between both instructors allow for even greater course alignment. Instructors should take time to review the course syllabi together to ensure similarity, specifically in learning outcomes. Additionally, signature assignments can and should be used across courses as a means of improving coursework symmetry and content review. For example, students at both high school and college may be required to complete a project. The instructions and guidelines provided to the students, as well as the rubric used by the instructors could be the same or at least very similar in criteria. We have learned to be comfortable in sharing created assignments and in the process have resolved to edit and improve assignments for the betterment of the students.

Perspectives from a High School Instructor

Observations. The dual credit program is a great academic opportunity for students as the rigor of the dual credit assignments is valuable for student learning and in preparing students for the post-secondary level. The dual credit program is also valuable for the high school instructor. The opportunity for instructors to learn new ideas and share with like-minded, supportive partners is beneficial and welcomed by both parties. Instructors can improve their teaching practices when they have another colleague to share ideas with and learn from without fear of judgment.

Considerations Before Getting Involved in the Program. Once forms of communication have been established, the classes that will be offered as dual credit will need to be identified. By sitting down with a faculty liaison and reviewing common courses, instructors will be able to determine which courses can be offered as dual credit. Lastly, identify the primary goals of the dual credit program.

Establishing Communication Best Practices. It is important for high school and college instructors to make time for regularly scheduled check-ins and team meetings. While face-to-face discussions may be preferred, the use of virtual meeting methods and email is necessary when schedules conflict and physical distance is a barrier. In-person visits and observations at the beginning and near the end of the course are highly recommended to ensure the course starts off well and ends strongly. Regular communication helps build and maintain the dual credit relationship.

Teams should discuss course goals, syllabi, overall content, and signature assignments to define and maintain course alignment. These documents should be in a shared location (eg, a Google Drive folder) to help both instructors collaborate and utilize shared signature assignments.

Another important part of communication is to share best practices to improve instruction and student learning. Teachers learn best from each other. When the college instructor comes in to observe the high school setting, both instructors should take time to share best practices and be a sounding board for each other on what is going well and what areas they are seeking improvement. The sharing of best practices to improve student learning should be an integral part of any dual credit program.

Strategies for Success

Make Sure the Student is Ready. Helping students understand whether they are truly ready for the college-level course is important. This can be achieved by maintaining high expectations for student learning, grading assignments in a timely manner, and providing consistent feedback so students understand if they have meeting expectations.

When students are not ready for the college level rigor, they need a lot more support than traditional-aged college students and this takes more time and support on the high school instructor’s part to help them be successful. If a student is not ready or willing to work at the college level expectations, they need to be encouraged to drop the dual credit portion of the course before the penalty-free drop date ends so their future funding is not jeopardized. In the physical education dual credit course, this means they still complete the high school course but do not earn dual credit. They can retake the high school course for dual credit in a different semester and use their previous experience to be more successful and ready for college-level work. Most often, the younger students are not ready and teachers should be honest with students about the rigor of the course so they can make an informed decision about whether or not to take it for dual credit. High school instructors should consider recommending the course to upperclassmen due to readiness and maturity levels. The younger students would benefit the most by taking the first course without dual credit and then taking it again as a dual credit course.

Collaboration. It is important for the high school instructor to maintain a high level of expectation for the course, especially in a physical education setting where the course content and calendar may not match that of the college-level course due to time constraints and course/teacher availability at the high school level. Both high school and college instructors must strive to match the course content as best as they can and achieve the planned signature assignments that achieve course goals. Both instructors should go over these at the beginning and end of each semester to reflect upon the data and make adjustments for the next semester.

Alignments. A best-case scenario is when the physical education course is aligned more like the college course and has the same work for all students, especially the signature dual credit assignments. The course is best aligned when students are not having to do “extra” work for dual credit. Unfortunately, due to scheduling and section availability, dual credit physical education courses do not have prerequisite requirements and are open to all students regardless of their grade, readiness, and desire to take the dual credit course. This makes it challenging for the high school instructor to manage the different needs of the students (those who are there for dual credit and the high level of rigor and those who don’t and just want a general physical education credit) and adds stress to managing the course overall. This scenario can cause students who are not prepared for the rigor of dual credit work to do poorly in class. A workaround here may be to have separate grading expectations on the signature assignments for the regular education vs. dual credit students. This would help introduce students to the concepts of dual credit work and still require the same work throughout the course, modifying expectations, while still holding college level dual credit students to the high standards of the dual credit work.

Sharing. The good news is that it gets easier the more you teach the course. New teachers need more support and check-ins as they are overwhelmed with expectations and how hard it is to push students for the dual credit course requirements. College instructors should share student work samples and rubrics as well as discuss grading and assessment practices. Sharing sample teaching videos or having the high school instructor observe the college instructor in person or virtually would be valuable.

Conclusion
The dual credit program has afforded students the opportunity to save money and earn college credit. However, there are many considerations prior to implementation and along the way. When all involved work as a team, relationships are built and education is heightened.
