Why I Don’t Eat Mushrooms

Mushrooms are commonly eaten among vegans and non-vegans alike, but many feel that mushrooms are not suitable for food. Below are a few of the reasons that I personally choose not to eat mushrooms.

(Note: Before anyone starts jumping on their keyboards to chastise me for posting this article, please note that these are my personal reasons for not eating mushrooms. I am not telling you that you cannot eat mushrooms. You are entitled to your personal preferences just as I am entitled to mine.

If you are offended by my personal decision concerning what I eat, then . . . Hmmm . . . I guess we should cancel our lunch date because I also don’t like brown sugar on my sweet potatoes. I prefer Creamy Italian Dressing instead.)

Vegan vs Plant-Based

While there is definitely overlap with a vegan diet and a plant-based diet, they are different.

A plant-based diet is a diet based on fruits, vegetables, whole grains, legumes, nuts, and seeds. A whole-food, plant-based diet uses only unrefined forms of these foods. This type of diet is usually adopted for health reasons.

In contrast, a vegan diet omits animal products usually for ethical or environmental reasons. Generally, vegans do not eat meat, dairy, eggs, or honey or wear animal products, such as leather, or use products tested on animals.

While I do agree with most of the ideology of veganism, I do not consider myself a vegan. Rather, I do my best to follow a whole-food plant-based diet because I believe that is the diet that God gave to humans when He created them. (See Genesis 1:29 and Genesis 3:18, which name grains, seeds, fruits, nuts, vegetables, and herbs.)

I believe that, since God is my Creator, He knows what is best for the health of my body.

Genetic Composition of Mushrooms

If you want to adhere to a plant-based diet, it is important to know what a plant is.

Mushrooms (the reproductive body of a certain phylum of fungi) are not plants. In fact, the genetic composition of mushrooms is actually more similar to humans than to plants.

For example, when plants are exposed to sunlight, they create energy through photosynthesis. When mushrooms are exposed to sunlight, they produce vitamin D (just like humans).

Much like humans, mushrooms store reserve energy as glycogen. Plants store reserve energy as starch.

The length of the ribosomes in mushrooms shows an amino acid that is similar to muscle. In fact, there are several amino acid sequences that are similar to heavy-chain proteins in mammals.

The cell walls of mushrooms are made up of chitin, which also composes the hard shells of insects, crabs, and other arthropods; plant cell walls are made up of cellulose.

The cell membranes of mushrooms contain ergosterol, a sterol that serves many of the same functions that cholesterol serves in animal cells. Ergosterol is not present in plants.

Plants have chloroplasts or chlorophyll. Mushrooms do not.

The protein and amino acid sequences of mushrooms are more similar to animals than plants.

Although mushrooms are often referred to as vegetables, they are not a vegetable at all.

Trophic levels

Plants are autotrophic. They produce their own energy via photosynthesis.

On the other hand, mushrooms are heterotrophs, like animals.

Heterotrophs cannot produce their own food, so they must consume other organisms in order to obtain energy.

Mushrooms are heterotrophs that recycle waste material from other trophic levels. They subsist by digesting dead or decomposing remains of other forms of life. They are scavengers (like vultures in the animal kingdom).

Food chains start with primary producers and end with decay and decomposers. With each step taken away from level one in the trophic levels, there is a significant reduction in health-giving properties.

Insect Nurseries

One of the chief uses of mushrooms in nature is as an insect nursery. Mushrooms are home to the Cecid fly larvae, Phorid fly larvae, Sciarid Fly larvae, Springtails, and many, many more. So much so that the FDA allows an exceptionally large number of maggots, mites, and other foreign material in each can of mushrooms. (I realize that many commercial foods contain insects, but the number allowed on mushrooms is exceptionally large because mushrooms host so many insects.)

Health

The consumption of mushrooms is promoted as beneficial for health; however, history tells us that many foods/products have for years been promoted as healthy only to later find that they were not.

Tobacco is a good example. Tobacco was used by native Americans for hundreds of years. In the 1900’s scientists, physicians, and the general public believed that tobacco had beneficial medicinal properties. For decades, physicians recommended the use of tobacco because it would supposedly aid digestion, help with weight loss, and make one live longer.

Current science recognizes that tobacco actually does offer some health benefits. Smoking eases the symptoms of ulcerative colitis and nicotine seems to protect against the development of Parkinson’s disease. But without a doubt, there are enough negative effects of tobacco – such as lung cancer – to warrant abstinence.

Certain varieties of mushrooms (particularly common button mushrooms) contain agaritine, a chemical reported to be carcinogenic. Cooking destroys some of the agaritine, but not all. In addition, mushrooms contain hydrazine and benzine diazonium both of which are cancer causing agents. It is also known that certain non-poisonous mushrooms cause small intestinal damage characterized by flattening of the mucosa, fusing of villi, and other alterations in the cells of the absorptive surface, causing abnormalities of absorption (which can lead to leaky gut syndrome, celiac sprue, mineral or fat malabsorption, allergies, etc.).

These factors may be small, but perhaps with more research we may find other problems with consuming mushrooms. maybe not. But, when it comes to my health, I’d rather play it safe.

Conclusion

Mushrooms may be tasty, but so are many other foods that don’t fall under the category of a whole, plant-based food. I prefer to fill my plate with health-giving fruits, vegetables, whole grains, nuts, and seeds included in the diet that God gave to humans at creation.

People with physical disabilities hold limited positions as scholars, teachers, or leaders in physical education, recreation, and sports. Perhaps the reason is that the field is flooded with able-bodied people who think they know best. But do they? Michael Oliver, imminent writer, and scholar argued that people with physical disabilities should be the only ones in the field of disability studies because they have a bodily experience with disabilities. The following five-part article series shares the perspective of a scholar in the field of sports disability who has his own physical limitations. In each article, he discusses a different issue a person with a physical disability faces in the profession of physical education, recreation and sport.


Part III: If You Cannot Do It – Can You Teach It?

Growing up I spent countless hours perfecting my craft in physical movement. As a young professional, I heard able-bodied professionals say, “Students with physical disabilities cannot and should not be PE teachers and coaches because they are not relatable.” He had no notion of the hours I spent in a pool perfecting my strokes, on the makeshift court my parents created for me shooting free throws, or practicing the perfect kick of a soccer ball. The professional in question knows little about who I am. Perhaps the able-bodied professional believes individuals with physical disabilities are incompetent as athletes, pre-service teachers, teachers, or coaches because the professional may see the disability first.

Perhaps the professional is biased that a person with a physical disability violates Aristotle’s argument of ethos, pathos, and logos, which most students use to evaluate whether a teacher is a good teacher or not. Ethos is the teacher’s credibility. Is the teacher a subject matter expert? Do they know the game: do they know their field? Teachers usually gain ethos through education and certifications. People with physical disabilities also acquire ethos through education and certifications. Most people with physical disabilities choose to be a teacher or a coach, because of their own athletic experience, just like an able-bodied student.

Pathos is connecting with students. Able-bodied professionals believe students cannot relate to teachers with a physical disability because of the disability. However, consider my experiences as a teacher and teaching assistant. A Division I football athlete who is able-bodied and highly motored skilled stood in class saying, “Our TA, Aubrey, is awesome.” Later as a university instructor, my student class evaluations were excellent.

Logos or logic is the last portion of Aristotle’s argument. I know it might be illogical to think that a person with a physical disability wants to be in PE where the body is constantly moving. The logic against is based on the premise that a disability reduces or limits the ability to teach a physical skill that one does not have: a seemingly valid concept. How can a student relate to an individual who is not athletic or highly motorized? One needs to perform and perform at a level to teach others. Thus, all physical educators are assumed to be highly skilled, subject matter experts with certification. This is a false premise. PE Pre-service teachers are not certified by their movement expertise or sport skills. Instead, the pre-service teachers take a broad curriculum in movement fundamentals and sports skills, in which they cognitively learn the rules, regulations, and pedagogy. Many of these pre-service teachers are not fundamental motor experts, nor do they have a history of sport and athletic experience. Whereas, I do. I played adaptive sport competitively for six years.

Thus, ethos, pathos, and logos do support pre-service PE students with physical disabilities to be in the field as educators.

City to update Housing Business Plan to apply for federal funding – DiscoverMooseJaw.com

The city council approved a change order to update the city’s Housing Business Plan in order to apply for federal funding.

The federal government recently announced that $4 billion in funding would be available through the Housing Accelerator Fund Program.

Consultants are currently working on updating the city’s Official Community Plan (OCP) and Zoning Bylaws. City council approved transferring $10,500 from the Innovative Housing account to the OCP and Zoning Bylaw update account. According to the city administration, those consultants would be in the best position to update the Housing Business Plan and help the city prepare the grant application.

Director of Planning and Development Michelle Sanson said the federal government has given a short timeline to get applications in.

“They’ve only given us a timeline for summer 2023. There’s only one window in 2023 and no date at this point,” she said.

Eligible applicants would need an action plan with seven housing initiatives, a housing supply growth target and a housing needs assessment report.

The city currently has a Housing Business Plan, but it would not be eligible for the grant.

“Unfortunately, our plan was more than two years old. That must be within two years, so we would require a more current and up-to-date housing business plan to even apply for the funding at that point,” Sanson said.

Planning and Development, Public Works, Engineering and Park and Recreation plan to work together to identify the seven initiatives for the application and will present them to the city council at a future meeting.

Sanson explained what kind of projects the federal funding could cover.

“This funding can be used for all kinds of different projects. It can be for infrastructure, including wastewater, energy, local roads, bridges, sidewalks, lighting, there are all kinds of different opportunities,” he said.

Count. Heather Eby spoke in support of updating the Housing Business Plan, saying that the city should take advantage when grants become available.

“I think we have to always be prepared to take advantage, hopefully, of any grants that will become available, especially when you look at the list, there are many things on here that really tick the boxes for us,” said Eby.

The city’s 2023 budget includes $125,000 in the Innovative Housing account for new housing projects. Sanson estimated that $10,500 would affect the funding of two dwelling units, but the federal funding has the potential to fund many more units over the next few years.

(CNN) — Severe tornado-spawning storms battered the Southeast and Ohio Valley, knocking out power to more than 615,000 homes and businesses across multiple states.

A possible twister damaged dozens of homes in Bargersville, Indiana, on Sunday as thunderstorms moved through the state, threatening hail and damaging winds. As they shifted through the rubble, Bargersville residents were warned to prepare to be without power for the next two days.

Scattered severe thunderstorms are likely across the Mid-Atlantic states Monday, bringing damaging wind gusts and large hail, according to the Weather Prediction Center.

Already, thunderstorms have walloped parts of Arkansas, Tennessee, Mississippi and parts of the Ohio Valley Sunday, knocking out power and leaving behind destruction.

Much of the power outages Sunday night were in Georgia, where more than 150,000 customers were in the dark, according to poweroutage.us.

“We are seeing large amounts of damage across Metro Atlanta and North Georgia. In areas that are the most heavily affected, our team is working to navigate the damage and get the lights back on for customers,” Georgia Power tweeted.

The storms came as more than 50 million people from Arizona to Louisiana on Sunday sweltered under a heat wave that was expected to spread and continue through the beginning of the July 4 holiday week.

The heat alerts include much of Texas as well as parts of Arizona, New Mexico, Oklahoma, Arkansas, Louisiana, Mississippi and Tennessee, according to the National Weather Service.

The extreme heat in Texas contributed to at least two deaths Friday at the remote Big Bend National Park, where temperatures reached 119 degrees.

At least 75 homes near Indianapolis were damaged

In Bargersville, a severe storm cut a path of destruction roughly 3 miles long, Bargersville Fire Chief Eric Funkhouser said.

One of the Bargersville Fire houses “witnessed the tornado going just north of the fire house” around 4:15 pm then reports began rolling in of homes collapsing and damage throughout the area, Funkhouser said.

At least 75 homes were left with moderate to severe damage “from the tornado being on the ground,” Funkhouser said, adding that the storm “took down the apartment complex that was under construction.”

No serious injuries were reported as of Sunday evening, according to the fire chief.

“This is the second tornado to hit Johnson County in the last three months,” Funkhouser said. “It’s amazing to have two tornadoes to come through, that were on the ground for that amount of time in Johnson County and for us to be able to hopefully – once we get through this – find out there were only minor injuries.”

Videos posted on social media showed a funnel-shaped cloud ripping through buildings as debris flew around it. Several houses could later be seen with their roofs ripped off.

“Given the photos and videos that we’ve seen, it’s virtually certain it was a tornado. We will be sending a survey team to make a final determination tomorrow,” National Weather Service Indianapolis Meteorologist Joseph Nield told CNN on Sunday.

Bargersville is about 17 miles south of Indianapolis and is located in Johnson County.

HOW TO MAKE EASY TACO PIE

To make my Easy Taco Pie even easier, I brown the ground beef, combine the ingredients, and place them on the skillet the night before. In the morning, all I have to do is pop the skillet in the oven for an easy breakfast or brunch.

EASY TACO PIE FASTER

If you want to make Easy Taco Muffins instead of Taco Pie which shortens the cooking time, you can bake the pies as individual muffins. Grease a 12-well muffin pan and follow the Easy Taco Pie recipe as written through Step 4. Then transfer the mixture to the greased muffin cups, filling each about two-thirds full. Bake for 10 to 13 minutes, until golden and puffed. Allow to cool slightly in the pan, then transfer the muffins to a serving platter and serve warm.

  • Preheat the oven to 350°F.

  • In a large oven-safe skillet, heat the butter over medium heat. Add the ground beef, onions, and taco seasoning and cook until the beef is cooked all the way through, about 7 minutes. Add the tomato sauce and stir well to combine.

  • In a large bowl, mix together the eggs, broth, cheeses, garlic, cilantro, salt and pepper.

  • Add the egg mixture to the beef mixture and stir to combine. Cook over medium heat for 3 minutes, until the eggs are just slightly set, stirring continuously.

  • Place the skillet in the oven and bake for 27 minutes, or until the eggs are cooked through in the center. Remove from the oven and let rest for 3 minutes, then slice and serve. If desired, garnish with fresh chives and/or cilantro and serve with salsa. Store leftovers in an airtight container in the fridge for up to 3 days.

  • Reheat in a 350°F oven for 3 minutes or in the microwave for 30 seconds, or until heated through.
